STORY AND SOUL
Fede Cocktailab was established in 2025 within Hotel Balestri, just a short walk from Ponte Vecchio. The concept is inspired by Fede Balestri Wittum, the hotel’s historic owner and a symbol of independence and modernity. A pioneering figure in Florentine hospitality, she was among the first to redefine the concept of welcoming guests through an international outlook and an independent vision. Her life, marked by courage, curiosity and a constant drive for innovation, inspires the philosophy of the venue: a laboratory of ideas and style where experimentation and avant-garde thinking coexist with elegance and precision.

Fede CocktailLab welcomes its guests into different spaces, all united by a single vision of contemporary elegance. From the main bar, the vibrant heart of the venue, to the intimate and private Sala Wittum, the outdoor dehor overlooking the Arno and the professional open-view laboratory, each space offers a different way to experience the venue. LAB & COCKATAILS
The lab is not simply a design feature but a true creative and production hub. Here, techniques such as distillation, fermentation, clarification and rotary evaporation come to life before guests’ eyes in a continuous process of transformation. Transparency is a core principle: everything that usually remains hidden behind the preparation of a cocktail is revealed and shared, making the act of creation an integral part of the experience.
